Sorry guys, I ment to try out this recipe on Saturday so I could post the results sooner but that ended up being a long day. I ended up making them late Sunday night. (It sort of reminds me of how I used to write my English papers last semester.)
I was able to make both of the recipes and here are my thoughts on one:
Jerry's Chocolate Chip Muffins:
The recipe called for one 12-oz. bag of chocolate chips... This sounds delicious in theory, but take a look at what that actually looks like compared to the batter and your talking as much flour as chocolate chips! I cut the chocolate chips down to 1 cup and believe me the muffins had plenty of chips.
The other thing I would note about the batter is that it was very doughy. It reminded me of bread dough for those of you that have made bread from scratch before. I think that is what caused the muffins to loose some of the moisture. The vanilla pudding powder is what is supposed to keep the muffins moist, so if even that isn't helping... there is something wrong with the ratio of ingredients.
Overall, I would say this recipe was not a complete flop (My critics liked it and asked for more... Damjan grabbed 4 from the plate!) but I personally think there is much room for improvement on these bad boys.
